White Squash & Shrimp Soup

"My Grandmother Grace always served a big lunch and, always, supper was usually just a good soup and sandwich. So making soup always makes me think of her. I like to make soup with our big green and white striped Southern heirloom cushaw squash, right. Its flavor is light, like summer squash—which is another great option for this soup. I serve the soup with brown shrimp from Lake Pontchartrain. Mmm, mmm, mmm!" - Chef John Besh

Soup

Mamma's Seafood Gumbo

"When I say I cook at home more and more like my mother and grandmother did, this gumbo is a great example. Cooking it makes me so happy! I get that deep shellfish flavor from cooking the crabs at least 45 minutes before adding the other seafood. It’s all about tasting, adjusting the flavors, and really just cooking from your heart." - Chef John Besh

Soup

Chef Luca Della Casa's Gazpacho

Chef Luca likes to prepare this classic Spanish dish that he learned in the years I lived in the Canary Islands; Gazpacho! His version is a little sweeter because he uses watermelon instead of cucumber. According to Luca, it's really important to have the tomatoes peeled and without seeds, and a seedless watermelon. It’s sweet and a little salty, smooth and nutritional. Enjoy it in a soup bowl or for the adults over ice with a shoot of vodka as a delicious summer drink.
