Italian Sausages, Peppers, and Onions from the 30-Minute Italian Cookbook
An Italian staple served regionally; this dish is as classic Italian as they come. Although you can use all colors of bell peppers, red ones are sweeter and cook faster than the others. This is a wonderful family dish, adored by children and adults alike. You will often find it served by street food vendors during summer festivals.

- ¼ cup olive oil, plus more if needed
- 3 red bell peppers, thinly sliced
- 2 small yellow or white onions, diced
- 1 tomato, chopped
- 2 Tbsp freshy parsley, chopped
- sea salt
- freshly ground black pepper
- 2 tsp Italian seasoning
- 6 Italian sausages (sweet or hot), each cut into 5 or 6 pieces
In a large sauté pan or skillet, heat the oil over medium heat for 1 minute.
Add the bell peppers, onions, tomato, and parsley.
Season with salt and black pepper, add the Italian seasoning, and cook for 5 minutes, or until the peppers are slightly softened and the onion is a bit translucent. If the oil is absorbing too quickly, reduce the heat.
Add the sausages and cook, stirring, for 15 minutes.
If the mixture looks dry, check the heat and adjust accordingly. Add a few additional Tbsp of olive oil if needed, or a few Tbsp of water.
Serve hot or at room temperature.
Freezing the sausages for 1 hour before prepping will make dicing them easier.
Although cooking this on the stovetop is faster, you can also add all the ingredients to a baking dish and bake at 375F for about 40 minutes. It's a wonderful alternative when you have a bit more time and don't want to stand at the stove.
