Turkey Pastrami Sandwiches
The signature Smoked Duck Pastrami from Noble Sandwich Co. gets a tasty twist with fresh turkey breast on grilled rye bread from H-E-B Cooking Connection. And yes, leftover Thanksgiving turkey does the trick!
Ingredients
Brine:
- 1-5 pound fresh turkey breast
- 4 cups water
- ¼ cup Real Co. Brown Sugar
- ½ cup Himalayan Pink Salt
- ¼ cup juniper berries
- ¼ cup Cracked Pepper
- 8 cloves garlic
- 2 tbsp red pepper flakes
Rub:
- ¼ cup Himalayan Pink Sea Salt
- ¼ cup Real Co. Brown Sugar
- ¼ cup juniper berries
- ¼ cup Cracked Peppercorns
- 2 tsp red pepper flakes
Instructions
- Bring all ingredients for brine to a boil until sugar and salts are dissolved. Allow brine to cool, and place in a large 2 gallon bag with turkey. Allow turkey to brine for at least 48 hours.
- Pre-heat oven to 250 degrees. Remove turkey from bag and pat dry. Grind all ingredients for rub and seasoned turkey evenly. Cook in roasted pan, breast side down for 1 hour, increase heat to 350, turn over turkey and continue to cook for 45 minutes-1 hour until temperature reads 160 in turkey breast.
- Remove turkey form oven and allow to rest for 15 minutes. Slice thin, and serve over Rye bread and Cooking Connection’s 4J Scallion mustard and Buyers Best Bread and Butter Pickles.
