The Original Black’s Barbecue’s Homemade BBQ Sauce
Sauce may not be a traditional ingredient when cooking Texas barbecue, but we sure do like to slather it on all the good smoky stuff! Though Barrett Black of The Original Black’s Barbecue in Lockhart can’t give away the recipe to his family’s secret sauce (which you can buy online or at the restaurant), he shares a simple homemade version that you can easily customize to your liking. It starts with a surprising ingredient that gives it a sweet kick: Dr Pepper soda!
Ingredients
- One 12-ounce can Dr Pepper (or your favorite dark soda)
- 2 cups ketchup
- 1 cup brown sugar
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon ancho chili powder
- 1 teaspoon granulated garlic
- A few drops of liquid smoke (optional)
- Splash of bourbon (optional)
Instructions
- In a medium saucepan, combine all ingredients except for the bourbon.
- Bring to a boil over high heat, then reduce the heat to low and simmer, stirring occasionally, for 10 to 15 minutes, or until the color deepens and the sugars caramelize.
- Season with salt, if needed, and stir in the bourbon. Let cool completely before refrigerating.
