Boil the first protein of your choice in your favorite Cajun Seasoned water. At Smashin Crab, they serve the following by the 1lb:
1. Mussels, Boil 1lb for 1.5
to 2 minutes
2. Snow
Crab, Boil 1lb
for 1.5 to 2 minutes
3. Crawfish, Boil 1lb for 2 to
3 minutes
4. Dungeness
Crab, Boil for 7 to 8
minutes
5. Blue
Crab, Boil for
7 to 8 minutes
6. Lobster, Boil for 7 to 8
minutes
Boil times fluctuate based on weight of
protein
As your protein is boiling, prepare the Trinity Sauce. Mix cajun seasoning, paprika, sugar, seafood seasoning, granulated garlic and celery salt in a bowl. Mix melted butter, minced garlic, and citrus pepper in a a separate bowl. Add 2 tablespoons or 1 oz. of the spice mixture into the butter mixture. Thoroughly mix.
Pull protein from boil and strain. Plate the protein, the pour the sauce over the protein. If desired, butter a couple of slices of french bread and begin eating.

Trinity Sauce
- 1 Tbsp. Favorite Cajun Seasoning
- 1 Tbsp. Paprika
- ½ Tbsp. Sugar
- 1 Tbsp. Seafood Seasoning (Old Bay)
- 1 Tbsp. Granulated Garlic
- 1 Tbsp. Celery Salt
- 6 oz. Melted Butter
- 1 Tbsp. Minced Garlic
- Citrus Pepper 1 Teaspoon per lb of Seafood
