Robard's Steakhouse Candied Bacon French Toast
What's to say? Blue Cheese French Toast with candied bacon in a bourbon cherry sauce...oh my! Try this decadent dish as an appetizer or dessert. Many thanks to my friends at Robard's Steakhouse at The Woodlands Resort & Conference Center for the recipe!
Ingredients
Bourbon Cherry Syrup:
- 4 oz Bourbon
- 0.5 cup Dry tart cherries
- 1 cup sugar
- 1 cup Apple juice
- 0.5 cup maple syrup
- 0.5 tsp Orange zest
- 0.5 tsp Black Pepper
Egg Batter:
- 2 each Eggs
- 0.5 cup whole milk
- ½ tsp Vanilla extracts
- dash Cinnamon fresh grated
- dash Nutmeg fresh grated
- 8 each 1” thick bias cut French bread
Candied Bacon:
- 4 slices Applewood Bacon
- 1 tbs dijon mustard
- 1 tbs brown sugar
- ¼ tsp thyme
- ¼ tsp crushed red pepper
Assembly:
- 1 tbs whole butter
- ½ oz Gorgonzola cheese
Instructions
For the Bourbon Cherry Syrup:
- Combine all ingredients; simmer, reduce by 1/3 and chill.
For the Candied Bacon:
- Lay bacon on rack, mix mustard & brown sugar then brush on, sprinkle thyme & red pepper. Bake @ 350 for 15 minutes.
To Cook & Serve:
- Dip bread in egg batter, soak for 5 minutes. Preheat nonstick skillet to medium heat, add whole butter and soaked bread sliced to pan, cook slowly till light brown, flip and continue cooking till firm than remove and plate. Top with slices of candied bacon and crumbled Gorgonzola cheese, add cherry syrup.
