Ricotta and Honey Crostini
This is the perfect appetizer to start off an Italian Christmas dinner!
Ingredients
- 1 bakery-fresh baguette, sliced into ½ inch slices on a bias
- ¼ cup extra virgin olive oil
- 2 cups whole milk ricotta
- citrus zest, amount to preference
- coarse sea salt, amount to preference
- ½ cup honey
Instructions
- Preheat the oven to broil setting. Place a rack on the very top shelf.
- Lightly brush both sides of the bread slices with the olive oil.
- Place bread on a baking sheet and place in the oven for 1 to 2 minutes. Flip the bread and toast on the other side for an additional 1 to 2 minutes. Bread should be slightly charred but not burned (it can quickly burn so do not walk away from the oven).
- In a small bowl, gently whisk the ricotta with either lemon or orange zest or a combination of the two.
- Top each of the bread slices with a large tablespoon of the ricotta. Add a light sprinkle of salt and top with a drizzle of honey.
- Serve immediately while hot and crisp.
