Redfish on the Half Shell from Goode Co. Kitchen & Cantina
Ingredients
- 10 oz Redfish on the half Shell
- Olive oil, as needed
- Goode Co. Seafood Shake seasoning (available at www.GoodeCompany.com) or use your favorite Creole-style seasoning.
- Lime butter, as needed (for basting)
- 1 piece Banana leaf
- 1 Grilled Cebolita (bulbed onion)
- 1 Grilled tomato
- 1 Jalapeno toreado
- 2 oz Lime butter
- 2 tortilla (flour or corn)
- 4 oz Mexican rice, cooked
- 4 oz Beans (charro or refried), cooked
Instructions
- Baste the redfish with a light coating of olive oil.
- Sprinkle Seafood Shake seasoning over the redfish. Don't be afraid to use a fair amount of the seasoning.
- Place the fish on a moderately hot section of a well-oiled grill. If the grill zone is too hot the fish will burn, and the center will be raw.
- Cook for about 3 minutes then rotate 90 degrees with an offset spatula and cook for 2 more minutes.
- Flip the fish and baste with lime butter. Cook for another 3 to 5 minutes.
- Line a sizzle plater with the banana leaf and set the redfish in the center.
- Baste with lime butter one last time.
- Arrange the tomato/toreado/cebollita around the sizzle platter edges of the banana leaf. Set the lime butter up as shown.
- Serve with rice, choice of beans and choice of tortilla.
