Peli Peli's Caramel Malva Pudding
Ingredients
The Pudding
- 1 large egg
- 2 Tablespoons melted unsalted butter
- 3 Tablespoons smooth apricot jam
- 1 teaspoon baking soda
- 1/2 cup brown sugar
- 1 cup All-purpose flour
- 1 pinch salt
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
The Caramel Sauce
- 1 cup dark brown sugar
- 1 pinch salt
- 1 Tablespoon smooth apricot jam
- 1/2 cup unsalted butter cut into squares
- 1 1/2 cup heavy cream
Toppings
- Whipped cream or Vanilla bean ice cream
Instructions
The Pudding
- Cream the butter and sugar together until butter is pale and soft
- Beat in the apricot jam
- Beat in the egg
- Dissolve the Bicarb soda into the milk
- Sift together the cake flour and salt and add to the batter alternately with the milk
- Mix in the vanilla extract
- Spoon the batter into an ovenproof bowl or individual ramekins that have been sprayed with non– stick spray
- Pour half the caramel sauce over the batter
- Bake the Malva pudding in a preheated oven at 350 degrees for 35 min or until risen and golden brown
- Remove from the oven and pour remaining sauce a little at a time until all the sauce is absorbed
- Serve with whipped cream or vanilla bean ice-cream
The Caramel Sauce
- Place all the ingredients together in a medium saucepan
- Bring the sauce to the boil, stirring continuously
- Reduce the heat and simmer for two minutes
- Remove from heat and keep warm
