The House Salad Dressing at Paesanos 1604 has to be one of the most popular in all of San Antonio. Just in time for summer, they agreed to share their recipe with me. It’s very easy to make and tastes even better on the beautiful patio at Paesano’s 1604 with a nice cold glass of white wine. If you haven’t been to the Paesano’s at 1604, you’ll love the beautiful setting, gorgeous outdoor patio, but you’ll also enjoy some of the delicious special signature dishes that you won’t find at the other Paesanos. Viva La Difference!
To make:
Blend all together except oil and peppadews
Add oil slowly while blending
Add pepperdews and pulse
Check seasoning and adjust as needed

- 2 Pasturized egg yolks
- 1/2 cup Water
- 1/2 cup Lemon Juice
- 1/2 cup Red Wine Vinegar
- 2 T Dijon Mustard
- 1/2 cup Honey or Karo corn syrup
- 1 T Minced Garlic
- 1 T Oregano
- 1 T Clark McDaniel’s Seasoning
- 2 T Kosher Salt
- 4 cups Oil
- 1/2 cup Chopped Peppadews
