Neighbor’s Kitchen & Yard’s Hot Li’l Honey Pizza
Sweet, savory, and spicy—this pizza from Neighbor’s Kitchen & Yard in Bastrop delivers it all! What really kicks up these slices is the homemade hot honey infused with habanero peppers. Though buying hot honey from the store is perfectly fine, mixing your own makes this pie extra special! Did you know that the restaurant gets its honey from its own hive?
Ingredients
Hot Honey
- 1 cup honey
- 3 habanero peppers stemmed, seeded, and chopped
Pizza
- 1 pound high-quality pizza dough (store-bought or from the recipe below), at room temperature
- All-purpose flour for dusting
- ¼ cup olive oil
- 2 cups shredded mozzarella
- 8 large salami slices
- ½ cup San Marzano tomatoes drained and hand-crushed
- ¼ cup cherry pepper slices drained (tricolor recommended)
- 4 Tablespoons hot honey (purchase or use recipe above)
Instructions
Make the Hot Honey
- Set up a double boiler or position a medium heat-proof metal bowl over a small pot of simmering water over low heat. The water should not touch the bottom of the bowl. Combine the honey and habaneros in the bowl and let them steep until the peppers are almost translucent. Remove from the heat, then strain the honey through cheesecloth or a fine mesh sieve into a clean heat-proof jar. Let cool to room temperature, cover, and store at room temperature.
Make the Pizza
- Preheat the oven to 450–500°F—as hot as you can. Place a pizza stone or large rimmed baking sheet on the bottom rack of the oven while it preheats. On a lightly floured surface, roll/press/stretch the pizza dough out to a 16-inch circle. Transfer to a sheet of parchment paper.
- Brush the olive oil all over the pizza, leaving a 1-inch border. Top with the mozzarella, salami, tomatoes, and cherry peppers. Carefully slide the pizza with the parchment paper onto the preheated pizza stone or baking sheet. Bake for 12–18 minutes, or until the pizza is golden brown at edges and the cheese is bubbling. Let cool slightly before slicing and serving.
Notes
Pizza Dough
Makes 1 pound pizza dough
1 cup warm water (110–115°F)
1 Tablespoon olive oil
1 Tablespoon honey
2½ teaspoons instant or active-dry yeast
3 cups all-purpose flour, plus more for dusting
½ teaspoon sea salt
Nonstick cooking spray, for greasing
1 Tablespoon olive oil
1 Tablespoon honey
2½ teaspoons instant or active-dry yeast
3 cups all-purpose flour, plus more for dusting
½ teaspoon sea salt
Nonstick cooking spray, for greasing
- In a small bowl, combine the warm water, olive oil, honey, and yeast. Let sit for 10 minutes until it looks foamy.
- In a large bowl, whisk the flour with the salt. Add the yeast mixture to the dry ingredients and knead with your hands until you have a cohesive dough. It may be a bit sticky, but that’s okay. Turn the dough out onto a lightly floured surface.
- Knead the dough for 6 to 10 minutes with your hands or with a stand mixer fitted with a dough hook for 3–4 minutes. The dough should spring back when poked.
- Spray a large bowl with nonstick spray and place the dough inside. Spray the top of the dough, then cover the bowl with plastic wrap.
- Let the dough sit in a warm place for about 1 hour, or until doubled in size. At this point the dough is ready to use, or you can store it covered in the refrigerator for up to 1 day. Let sit at room temperature for at least 1 hour before using.
