Myron's Prime Steakhouse's Shrimp Myron

Ingredients
Myron's Butter
- 1 lb. salted butter
- 2 tsp. Garlic-chopped
- 1 1/2 Tbsp. Montreal steak seasoning
- 1 Tbsp. old bay seasoning
- 3 Tbsp. fresh lemon juice
Shrimp Myron
- 1 oz. olive oil
- 8 Gulf shrimp
- 1/2 bunch green onions, diced
- 1 pinch kosher salt
- 2 oz. dry white wine
- 2 Tbsp. Myron's Butter
Instructions
Myron's Butter
- Allow butter to come to room temperature. Place butter in food processor and whip until aerated. Add dry ingredients and continue to whip, then add lemon juice and whip until creamy with plenty of air. Hold at room temperature.
Shrimp Myron
- Heat saute pan on high then add olive oil. Add shrimp and gently saute on both sides until cooked (no translucence). Add green onions and salt, then deglaze the pan with wine, reducing until almost evaporated. Remove from heat and whip in Myron’s butter until soft, being careful not to break (liquify) the sauce.
