Killen's BBQ Warm Potato Salad
Red bliss potatoes are kicked up with creole mustard and crispy bacon -- a side dish stunner you can serve hot or cold!
Ingredients
- 3 pounds Red Bliss Potatoes washed and cubed
- 1 oz Grapeseed oil
- 1 oz Cooked bacon diced (crispy)
- 2 Boiled eggs chopped
- 4 oz Onion small diced
- 3 oz Green pepper small diced
- 3 stalks Celery small diced
- 2 oz Pickles small diced
- 2 oz Green onions thin sliced
- Âľ cup Mayonnaise
- ½ cup Creole Mustard
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Place the cubed potatoes in a large sheet tray and drizzle grapeseed oil. Season with salt and pepper and place in the oven until golden brown and fork tender.
- In a small bowl add all the ingredients together and mix well. Season with salt and pepper
