Hôtel Du Palais Biarritz's “Yummy” Cocktail
Having just returned from an incredible food and wine journey in France, Tanji wanted to share a cocktail she fell in love with in the city of Biarritz. She discovered this gem at the gorgeous Hôtel Du Palais. It’s very aptly named the “Yummy.” The cocktail is delicate, floral, and slightly sweet. The key to the unique drink, she was told, is the rose-infused vodka that they make on site. Cheers to Pierre at Le Bar Napoleon III for sharing this recipe with us!
Ingredients
Rose-Infused Vodka
- ¼ cup edible dried rose petals
- 3 cups high-quality vodka
Cocktail
- 2½ ounces rose-infused vodka
- 2 ounces Aperol
- 1½ ounces peach liqueur
- 1 ounce verjus
- 2 dashes grapefruit bitters
- 1 egg white
- Assorted dried edible flowers for garnish
Instructions
- Make the Rose-Infused Vodka Place the rose petals in a 1-quart heat-proof jar. In a small saucepan, bring the vodka to a gentle simmer. When you start to see small bubbles, turn off the heat and pour the vodka over the rose petals. Be sure to keep an eye on the vodka so it doesn’t simmer for an extended period of time—it will cook off the alcohol. Seal the jar and shake well. Store on your countertop or in the refrigerator and let sit for at least 48 hours, shaking periodically. Strain through a fine mesh sieve into your preferred bottle.
- Make the Cocktail In a cocktail shaker, combine all of the ingredients. Cover and shake for 10 seconds. Add the ice cubes, then cover and shake very well until frothy, about 30 seconds more. Strain into two chilled coup glasses and garnish with dried edible flowers. Enjoy!
