Homemade Easter Marshmallow "Peeps"
These are so cute! Easter "peeps" you design at home. These are not the store-bought product we know and love, but rather a homemade interpretation. So, in that case, get creative! We have recipes for nearly every fruit-flavored "peep" you can think of! Happy Easter 🙂
Ingredients
Raspberry Marshmallows:
- ½ cup Puree
- 2 tablespoons Cold Water
- 2 tablespoons unflavored powdered gelatin
- ¾ cup Sugar
- ½ cup light corn syrup divided
- 1/3 cup puree
- 1/8 teaspoon salt
Vanilla Marshmallows:
- 4 ½ teaspoons unflavored powdered gelatin
- ½ cup cold water
- ¾ cup Sugar
- ½ cup light corn syrup divided
- ¼ cup water
- 1/8 teaspoon salt
Key Lime Marshmallows:
- ¼ cup key lime juice
- ¼ cup cold water
- 4 ½ teaspoons unflavored powdered gelatin
- 1 cup Sugar
- ½ cup light corn syrup divided
- ¼ cup water
- 1/8 teaspoon salt
Instructions
For the Raspberry Marshmallows:
- Whisk together the purée and cold water, add gelatin, allow to soften for 10 minutes. Mix the sugar, ¼ Cup corn syrup, puree, water and salt in sauce pan, cook to 240 F.
- Microwave bloomed gelatin till melted, add to kitchen aid bowl along with ¼ cup corn syrup, slowly add syrup while whipping, whip 5 minutes on medium speed and then whip 5 more minutes on medium high speed, the finished marshmallow should have tripled in volume, pipe into desired shape.
For the Vanilla Marshmallows:
- Whisk together the gelatin and cold water, allow to soften for 10 minutes. Mix the sugar, ¼ Cup corn syrup , water and salt in sauce pan, cook to 240 F.
- Microwave bloomed gelatin till melted, add to kitchen aid bowl along with ¼ cup corn syrup, slowly add syrup while whipping, add 2 teaspoons Vanilla Extract, whip 5 minutes on medium speed and then whip 5 more minutes on medium high speed, the finished marshmallow should have tripled in volume, pipe into desired shape.
For the Key Lime Marshmallows:
- Whisk together the lime juice and cold water, add gelatin allow to soften for 10 minutes. Mix the sugar, ¼ Cup corn syrup , water and salt in sauce pan, cook to 240 F.
- Microwave bloomed gelatin till melted, add to kitchen aid bowl along with ¼ cup corn syrup, slowly add syrup while whipping, whip 5 minutes on medium speed and then whip 5 more minutes on medium high speed, the finished marshmallow should have tripled in volume, pipe into desired shape.
