Dirty Rice from Stingaree
Ingredients
- 5 lbs white rice
- ½ lb ground pork
- ½ lb chicken liver
- ½ lb ground hamburger meat
- ¼ lb chopped celery
- ¼ lb chopped onion
- ¼ lb chopped green pepper
- 1 tsp Tony's Seasoning
- 1 Tbsp Cajun spice
- 14 oz seafood stock (Stingaree makes homemade, or you can find in store)
Instructions
- Prepare the rice according to package directions. Set aside.
- In a large bowl, mix together ground pork, chicken liver, and hamburger meat.
- In a large pot over high heat, cook meat mixture until browned.
- Turn the heat down to low and add celery, onion, and green pepper. Continue cooking until vegetables begin to soften, being careful to stir constantly, about 4 to 5 minutes.
- After vegetables have softened, add spices and seafood stock and stir to combine. Simmer for an additional 10 to 15 minutes.
- Add the cooked rice into the pot and stir to combine. Take off the heat and serve.
