Choppy Bob Nachos and Signature Queso from Triple J Chophouse
Ingredients
- ½ medium onion, diced
- 6 oz butter
- 6 oz flour
- ½ gallon milk
- 1 pint heavy cream
- 24 oz store-bought prepared queso cheese, diced
- 2 tsp cumin
- 4 tsp white pepper
- 4 tsp kosher salt
- wonton chips (store-bought)
- smoked chopped brisket
- shredded mozzarella
- diced tomatoes
- sliced black olives
- sliced jalapenos
- grated Parmesan cheese
Instructions
- Add butter to sauté pan over medium heat and add onions; cook until translucent.
- Add flour to thicken, then add milk and heavy cream. Turn heat down to low and stir frequently to avoid burning. Then add spices.
- Remove pan from heat and add cheese until it has completely melted and has a creamy texture. Mix thoroughly.
- Put desired amount of wonton chips on serving platter or plate.
- Add smoked chopped brisket, shredded mozzarella, diced tomatoes, black olives, and sliced jalapenos.
- Top with the queso while it’s still hot and sprinkle generously with grated Parmesan cheese. Enjoy!
