Candied Pork Belly from The Original Black's Barbecue
Ingredients
- 3 lbs pork belly, raw
- salt and pepper
- ¾ cup Black's barbecue sauce
- ½ cup brown sugar
- 3½ Tbsp maple syrup
- 1 Tbsp pepper sauce
Instructions
- Preheat smoker to 250℉
- Score the fat on top of the pork belly with a sharp knife.
- Generously season the pork belly with salt and coarse black pepper, ensuring an even distribution.
- Place the seasoned pork belly in the smoker and smoke at 250℉ for approximately 3 to 4 hours or until the internal temperature reaches 190℉ and a probe thermometer can easily go in and out of the meat. This low and slow cooking method will render the fat and make the pork belly tender.
- In a mixing bowl, combine Black's BBQ Sauce, brown sugar, maple syrup, and pepper sauce. Adjust the amount of pepper sauce based on your desired level of spice.
- Mix the ingredients thoroughly until the brown sugar is fully dissolved.
- Once the pork belly reaches an internal temperature of 190℉ and is tender, remove it from the smoker.
- Cut the smoked pork belly into bite-sized cubes.
- Toss the pork belly bites in the prepared candy sauce, ensuring they are evenly coated.
- Preheat your oven or smoker to 375℉.
- Place the sauced pork belly bites on a sheet tray and cook in the oven for about 10 to 15minutes, or until the sauce becomes sticky and caramelized.
- Remove from the oven and let them cool slightly.
- Serve the smoked pork belly bites with the candy sauce, and savor the perfect balance of smokiness, sweetness, and heat.
