The Original Black’s Barbecue’s Honey Jalapeño Sausage Quesadillas
These mini quesadillas from The Original Black’s Barbecue are the perfect finger food for your next get-together. Cooked up on a griddle, the cheese spills over the corn tortilla, creating a crispy crown that has a spicy, cheesy sausage sandwiched in between. Finish them with a drizzle of honey.
Ingredients
- 6 cooked jalapeño cheddar sausages (see Note)
- 12 street taco–sized yellow corn tortillas
- Vegetable oil
- 3 cups grated Oaxaca or mozzarella cheese
- Honey for drizzling
Instructions
- Preheat a nonstick skillet or griddle over high heat.
- Using a paring knife, butterfly each sausage lengthwise, then split in half crosswise.
- Working in batches, dip the corn tortillas in vegetable oil, letting any excess drip off. Place tortilla on the griddle. Add ¼ cup of cheese to each tortilla, letting a little bit of the cheese spill over directly onto the griddle.
- Once the cheese is almost completely melted, remove the tortillas from the griddle and top each one with half a sausage. Drizzle with honey and then fold up the quesadillas.
- Repeat with the remaining ingredients and then serve!
