Auberge du Soleil's Pecan Coffee Cake
From a recent trip to Napa Valley, I enjoyed a delicious Pecan Coffee Cake from Auberge du Soleil. I like it so much I got the recipe just for you!
Ingredients
Cake Batter
- 2 oz unsalted butter
- ¼ cup brown sugar
- ¼ cup sugar
- 1 egg
- 1 tsp vanilla
- 1 cup all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup buttermilk
Pecan Coffee Cake Streusel Topping
- 1/8 cup sugar
- 1/8 cup brown sugar
- ¼ cup all-purpose flour
- ¼ tsp ground ginger
- ¼ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 2 oz unsalted butter cold & cubed
- 4 oz chopped pecans
Instructions
Cake Batter
- Cream butter, brown sugar and sugar in a mixer with a paddle attachment on medium speed until fluffy & light in color
- Add egg and vanilla to butter mixture, incorporate, scrape bowl
- Sift together all purpose flour, baking powder, baking soda and salt. Add to butter and egg mixture
- Incorporate buttermilk.
Pecan Coffee Cake Streusel Topping
- Combine all ingredients. Mix with a paddle attachment on medium speed until it looks like loose gravel
Pecan Coffee Cake
- Prepare 8” spring form pan, coating the inside with butter
- Pour cake batter into the pan
- Sprinkle with streusel topping
- Bake at 375 degrees F for approximately 30 minutes or until a toothpick comes out cleanly when inserted into the middle.
