Achiote Spiced Chicken
Ingredients
- 1 cup salt
- 1 cup sugar
- 1 gallon water
- 1 whole chicken, separated
- 8 oz achiote powder
- 2 oz orange juice
- 2 oz lemon juice
- 2 oz lime juice
- 2 oz distilled white vinegar
- 1 white onion, roughly chopped
- 2 oz garlic
Instructions
- Prepare a brine by mixing the salt, sugar and water into a large pot and submerge the chicken.
- Brine the chicken for 12 hours in the refrigerator.
- Once brined, remove the chicken from the pot.
- Put all remaining ingredients into a blender and blend to a smooth consistency.
- Put chicken in a new vessel and pour the marinade over the chicken.
- Marinate in the refrigerator for 48 hours.
- Heat the grill.
- Grill the chicken at 250℉ until the internal temperature reaches 165℉.
