a’bouzy’s Steamed Mussels and Pomme Frites
This traditional French dish, Moules & Frites, from a’Bouzy in Houston, is a delicious dish that tastes complex, but is incredibly easy to make! The entire process takes less than ten minutes and results in a beautiful, yet simple dish. Remember to serve with French fries or garlic bread to soak up the tasty broth!
Ingredients
- 1 pound mussels
- 3 ounces white wine
- 4 garlic cloves minced
- 1 small shallot finely diced
- 1 Tablespoon parsley chopped
- 2 ounce whole butter
- Lemon juice to taste
- Chili flakes to taste
- Salt and pepper to taste
Instructions
- Stack 2 sauté pans on top of each other over high heat. Wait until you see smoke rising, then add the mussels, white wine, garlic, shallot, parsley, butter, lemon juice, and chili flakes.
- Let the ingredients sauté in the pan for a minute, then flip the top pan, letting the mussels and aromatics land in the bottom pan. Use the top pan as a lid and let them steam until the mussels start to open, about 2-3 minutes. If all of the mussels don’t open, allow them to steam for another minute or two. If some still aren’t opening, discard them.
- Once the mussels are open, add salt and pepper to season. Take the mussels and broth and add them to a serving bowl with a side of crispy French fries or garlic bread!
