White Chocolate Limoncello Mousse
Many thanks to Chef Andrew ‘Drew’ Rogers at Drew's Pastry Place in Houston for dishing on this decadent Limoncello Mousse with white chocolate! Drew's is a family owned, authentic Italian bakery located in Northwest Houston.
Ingredients
- 3 oz Limoncello
- 3 oz granulated sugar
- 3 oz water
- 8 oz white chocolate chunks
- 1 oz unsalted butter
- 8 oz marscapone
- 6 egg yolks
- 8 oz whip to stiff peaks whip cream fresh
- 1 ea lemon zest
Instructions
- Add Water and sugar to pot and bring to boil for 3 minutes. In a separate container beat yolks until light and fluffy. While beating yolks, add sugar water and whip for 1 minute. Add white chocolate and butter to mixture.
- Add Limoncello and stir until well mixed.
- Fold in mascarpone to white chocolate mixture. In another bowl, whip the cream to form stiff peaks and fold into chocolate mixture.
- Add lemon zest. Pour into ramekins or glass of your choice.
- Refrigerate 6 hours, preferably overnight. Garnish with candied lemon and white chocolate.
