Water Street Market's Shrimp Picayune Sauce

Ingredients
- 1 cup olive oil
- ¾ cup clarified butter
- ½ cup liquid brown sugar
- 2 Tablespoons Worcestershire sauce
- 3 bay leaves
- ½ cup lemon juice
- ½ cup + 2 Tablespoons vermouth (settles to bottom, layers)
- 1 Tablespoon + 1 teaspoon oregano
- 1 Tablespoon + 1 teaspoon thyme
- 1 Tablespoon + 1 teaspoon granulated garlic
- 1 Tablespoon + 1 teaspoon salt
- 1 Tablespoon + 1 teaspoon black pepper
- 2 teaspoons cayenne pepper
- 1 teaspoon ground rosemary
- 1½ teaspoons Tabasco sauce
- ¾ teaspoon poultry seasoning
Instructions
- Combine ½ cup liquid brown sugar (or melt ½ cup of brown sugar with 2 tablespoons of water) with clarified butter over medium-high heat until sugar fully dissolves into liquid.
- Then add all remaining ingredients one at a time and stir well until thoroughly mixed.
