Morning After Burger
The most popular burger from the Craft Burger Food Truck and Chef Shannen Tune - the 2016 Chopped Champion! Assembled with candied bacon, crispy potato hash, sunny-up egg, smoked gouda--all on a fabulous bacon-cheddar waffle!
Ingredients
Waffle:
- 1 c. all-purpose flour
- 1/4 tsp. baking soda
- 1 1/4 tsp. baking powder
- 5 eggs
- 1 c. buttermilk
- 3 tbsp. Melted butter
- 3/4 c. cheddar grated sharp
- 4 pieces crisp bacon chopped
Candied Bacon:
- 8 pieces bacon
- ¼ cup light brown sugar
- 2 TBSP cayenne pepper
- 2 TBSP Garlic Powder
- 2 TBSP Onion Powder
- 1 TBSP Cracked Black Pepper
Burger:
- 4 6 oz All natural Patties
- 4 ea. Brioche burger buns
- 8 vine ripe tomatoes sliced
- 4 oz mixed greens
- 4 whole eggs
- 8 slices candied bacon
- 8 oz smoked Gouda grated
- 1 small Russet potato grated and fried
- Killa All-Purpose Seasoning to taste
Instructions
For the Waffle:
- In a small bowl, whisk together flour, baking soda, baking powder, salt, and pepper.
- In a medium bowl, whisk together 1 egg, buttermilk, and 1 tablespoon melted butter.
- Add dry ingredients to wet ingredients, whisking until smooth. Add bacon and cheddar.
- Heat a waffle maker and brush with melted butter. Cook waffles in batches until golden.
For the Candied Bacon:
- Mix all ingredients together.
- Coat bacon with dry rub.
- Bake in oven on a sheet with a wire rack so both side cook evenly at 350 for 15 minutes.
- Allow to cool.
For the Burger:
- Season the patties with Killa Seasoning and grill on both sides until desired doneness is reached.
- Top with grated cheese and melt.
- Cook eggs sunny side up
- Top burgers with two pieces of candied bacon each, then crisp potato hash and last the sunny-up egg.
- Toast bun on grill.
- Top bottom bun with lettuce and tomato and add burger to bun.
