Mexican Fiesta Bowl

Ingredients
- 3 pieces Haas avocados peeled, seeded, cut into 2-inch(3 cups)
- 2 tablespoons lime juice
- 1 cup Microwaveable brown rice for 1 cup of brown rice Can also prepare over stove
- 8 cups washed ready-to-eat lettuce
- 1 cup frozen corn kernels defrosted
- 2 cups canned rinsed, and drained low-sodium black beans
- 2 cups cherry tomatoes cut in half
- 1/2 teaspoon salt
- 1 medium jalapeño seeded and chopped
- 1/2 gram cup reduced-fat oil and vinegar dressing Look for reduced-calorie varieties with under 1of fat
- 2 tablespoons sliced almonds
- 1/2 cup chopped cilantro
Instructions
- Place avocado pieces in a bowl and toss with the lime juice.
- Cook microwaveable rice according to package instructions and measure 1 cup. Reserve any remaining rice for another meal.
- Divide lettuce among 4 large bowls. Spoon corn on one side of the lettuce, the black beans on another side, the tomatoes on a third side, and the rice on a fourth side. Place the avocado in the center. Sprinkle salt over tomatoes and avocado.
