“This orginally appeared in the Express News Wednesday, October 25, 2000, I still have the article! The crushed pineapple adds moisture and flavor, while the pumpkin provides an excellent source of vitamin A and rich pumpkin flavor. It is real easy to make, one of two reason I have continued making it over the years. And also — everyone asks for it! Even my husband, and this year he wants me to make it for his office too! The recipe makes two loaves. It takes only about 15 minutes to put together and one hour to bake. You may cut the recipe in half if you only want one loaf (you’ll wish you hadn’t). Bake two loaves and put one in the freezer or give to a friend, they’ll love you for it! Cream cheese and chopped nut make a nice topping, we like to toast it and just put butter on it. Either way, enjoy!” -Pat Gonzales
Preparation
Heat oven to 350 degrees. Lightly spray two 8 1/2-by4 1/2-inch loaf pans with cooking spray.
In mixer bowl, beat together sugar and butter until well blended. Add pumpkin, pineapple and eggs; beat well. Set aside. In medium bowl combine flour, soda, pumpkin pie spice and salt; add to pumpkin mixture,(if desired also add walnuts), mixing until dry ingredients are just moistened. Divide batter into prepared pans, spread evenly.
Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean. Cool 5 minutes. Remove from pans to wire racks; cool completely. Lightly sprinkle powdered sugar over tops, if desired.

- 1/2 cup (1 stick) butter or margarine, softened
- 3 1/2 cups all-purpose flour
- 1 (15-ounce) can pumpkin
- 2 teaspoons baking soda
- 1 (8 1/4 ounce) can crushed pineapple in juice, undrained
- 2 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 1 cup coursely chopped walnuts, optional
- Powdered sugar, optional
