Ellen's Blackened Shrimp and Grits
Ingredients
- 1 cup quick grits
- 2 cups Shredded Cheddar Cheese
- 4 cups water
- 8 raw, peeled shrimp
- 1 tablespoon Cajun blackened seasoning
- 2 tablespoon Vegetable oil
- 2 cups Fresh Spinach
- 1/4 cup chopped TOMATOES
- 1/4 cup chopped bacon
- 1 tsp chopped garlic
Instructions
Cheese Grits
- Bring 4 cups of water to a boil with 1 tablespoon salt.
- Stir in 1 cup of quick grits and boil for 5 minutes, stirring occasionally.
- Remove from heat and stir in 2 cups shredded cheddar cheese.
- Add salt to taste.
Shrimp
- Toss raw, peeled shrimp in 1 tablespoon of Cajun blackened seasoning.
- Heat 1 tablespoon vegetable oil in saute pan.
- Add seasoned shrimp to pan and cook until done, flipping halfway through. (Approximately 3 min).
Vegetables
- Heat 1 tablespoon vegetable oil in saute pan.
- Add garlic, bacon, tomato, and spinach to pan and sautee for 1 minute or until spinach starts to wilt. Stir occasionally.
- Plate grits, add vegetable saute mix, top with shrimp.
