Central Market's Coconut, Pecan and Flax Seed Granola with Dried Fruit
Give that granola an upgrade with coconut and pecans! This recipe for Coconut, Pecan and Flax Seed Granola with Dried Fruit from Central Market can be whipped up several days ahead of Mother's Day. We love the idea of serving it as a parfait in a mini Mason jar (above) for a pretty presentation touch!
Ingredients
- 5 cups old-fashioned oats
- ½ cup wheat germ
- ½ cup milled flax seed
- ½ lb unsweetened dried shredded coconut
- 1 cup Sesame seeds
- 1½ cups slivered almonds
- 1½ cups chopped pecans
- ¾ cups canola oil
- ½ cup honey
- ½ cup molasses
- 1½ teaspoon salt
- 3 teaspoons Cinnamon
- 2 cups dried fruits (combo of raisins, blueberries, cranberries)
Instructions
- Preheat oven to 300 degrees.
- In a large bowl, combine oats, wheat germ, flax seed, coconut, sesame seeds and nuts, mixing well.
- In a large saucepan, combine the brown sugar, water, oil, honey, molasses, salt, and cinnamon. Heat until thoroughly mixed; do not boil.
- Pour syrup over dry ingredients, and stir until evenly coated. Spread evenly into large roasting pan.
- Bake 20 to 30 minutes, stirring occasionally. If a crunchier texture is desired, bake for an additional 10 minutes.
