Bumdoodlers' Chocolate Peanut Butter Pie
Ingredients
Peanut Butter Base
- 1 cup crunchy peanut butter
- 1 cup powdered sugar
- 1 cup milk
- Baked pie shell
Hot Chocolate Pudding
- ½ cup sugar
- 2 Tablespoons corn starch
- 2 Tablespoons sifted cocoa
- 1⅔ cups milk
- 2 egg yolks
- 1 Tablespoon butter
- ½ Tablespoon dark vanilla
- 1½ cups whipped cream
- ¼ cup chocolate syrup
- ½ cup mini peanut butter chips
Instructions
Peanut Butter Base
- In a small mixing bowl with a beater, mix crunchy peanut butter and powdered sugar. Add milk a little at a time until it is creamy, but not runny. Then pour into a baked pie shell.
Hot Chocolate Pudding
- In a saucepan, add sugar, corn starch, cocoa, milk, and yolks and cook until is thick and bubbling.
- Then add butter and dark vanilla.
- Top the peanut butter base in the baked pie shell with the pudding and refrigerate.
- Top with whipped cream, chocolate syrup, and mini peanut butter chips before serving.
