Few culinary figures have had as big of an impact on our cooking as the queen icon herself, Julia Child. Her approachable style and accessible French recipes stand the test of time—we still return to our favorites all these years later! As we enter March and celebrate the incredible women who have taught us so much, we’re sharing our most-loved, tried-and-true Julia recipes that every cook should know.
Bouillabaisse
Julia Child’s classic bouillabaisse, a traditional Provençal fish stew, is hearty and warming. Family Style Food shows how to make this tried-and-true recipe that is aromatic and wholly satisfying for the coldest nights. Best of all, it comes together in just an hour!
Best-Ever Cheese Soufflé
Chef Alexandra Guarnaschelli was inspired to develop this riff on Julia Child’s original recipe featured in Food & Wine after perusing old supper club menus. Wrapping a piece of foil around your mold will help ensure that the soufflé doesn’t spill over while baking.
Potato Leek Soup
Potato Leek Soup is a go-to comfort dish for many home cooks. Whether they know it or not, their kitchen endeavors were inspired by Julia Child’s affinity for the dish. The simplicity of this rendition from Simply Recipes makes the end result taste even better.
Julia Child’s Chocolate Mousse
This recipe was developed in conjunction with JC100, a celebration of Julia Child’s 100th birthday. You can easily swap in a variety of liqueurs to flavor the dish, from Grand Marnier to whiskey—the choice is yours!
Quiche Lorraine
A creamy custard filling, rendered bacon, melty Gruyere and a tender, rich crust (thanks to the combination of butter and lard!), Julia’s classic quiche should be part of every cook’s repertoire. This adaptation from Bon Appétite is very similar to her original.
French Onion Soup
Who doesn’t love French Onion Soup? The rich, meaty bone broth, sweet caramelized onions and the toasty cheese and crouton topping. This OG recipe is a must try.
Coq Au Vin
The red wine is the star of this classic braised chicken dish! While the alcohol cooks off, the flavor of the wine remains and mingles beautifully with the smoky bacon, garlic, onion and rosemary. This slightly-modernized version from The Endless Meal is very true to Julia’s original recipe.
Sole Meuniere
Sole Meuniere is a timeless recipe with lemon, capers and butter. It might look simple, but the tender white fish packs a lot of flavor. This recipe, courtesy of Martha Stewart Living, is from one of Julia’s cookbooks with Jacques Pepin.
Julia Child’s Beef Bourguignon
As this recipe headnote, courtesy of Tablespoon, aptly points out: There are some recipes that are worth the wait and Julia Child’s Beef Bourguignon is one of them. For the most concentrated flavor and fork-tender beef, you should not rush this recipe. The longer you can let it gently simmer, undisturbed, on your stovetop, the greater the reward at the end.
Julia’s Savory Crepes
Julia Child is the inspiration for so many chefs and cooks around the world. These crepes are one of her specialties! Cooked bell peppers, onions, tomatoes, cheese are rolled up in a light, tender crepe. This savory version is well worth making at home!
