Gator’s Bayou in Lubbock brings the flavors of New Orleans to the High Plains of Texas! Tanji digs into creative mash ups like Boudin-stuffed Egg Rolls, packed with dirty rice and melted pepper jack cheese, and Empanada-style hand pies filled with crawfish and smothered in étouffée. We also try spicy Cajun favorites like Louisiana red beans and rice, crawfish gumbo, and a bread pudding that country singers Josh Abbott and Jake Owen order on every visit.
