There are few foods more perfect, and more versatile than the sandwich. We’ve rounded up our top 5 favorite sandwiches from the Goodtaste archives to share with you here. Be it breakfast, lunch and dinner, there’s a sandwich for every occasion.
Chicken N Pickles Sandwich
If there is any leftover pickle juice in your refrigerator, don’t waste it! Chicken N Pickle in San Antonio marinates chicken breasts in pickle brine overnight to tenderize the chicken, while keeping it moist and creating a deep flavor. The pickle juice also gets added to the avocado mash to create a touch of salt and acidity.
This over-the-top tomato sandwich is inspired by one from Turkey & The Wolf in New Orleans. For added crunch, roasted sunflower seeds are liberally sprinkled on the sliced bread, creating a nice contrast with the juicy sliced tomatoes. This sandwich is also as much for mayonnaise lovers as it is for tomato purists – don’t be shy when smearing it on! The lemony mayo mixes with the tomato juices to make a vibrant, drippy sauce that is soaked up by the thick slices of toasted sourdough bread. Make this epic sandwich now!
Monster Breakfast Sandwich
We’ve been riffing on this slab breakfast sandwich technique from Alexandra’s Kitchen and came up with our ideal combo of crispy bacon, jammy summer tomatoes and fresh greens. It’s a fun way to whip up breakfast for the whole family in one fell swoop! Every component, from the fresh-baked bread to the eggs, are cooked in the oven – no toasting, frying or scrambling required. The final monster-sized sandwich can then be sliced into 4 (or even 6) decent-sized sandwiches. To speed things up in the morning, consider baking your bread the night before so you can jump right in with the eggs and toppings.
Thanksgiving Detox Sandwich
We all know that one of the best parts about Thanksgiving is diving into those leftovers the next day, but this sammy is good all year long. Consider this loaded sandwich with turkey, cranberry mayo and extra vegetables as a meal in and of itself. The sprouts, avocado and cucumber keep things fresh and bright and the 2-ingredient mayonnaise holds it all together. In place of stuffing, roasted sweet potato slices add more heft without adding more bread. Thanksgiving or not, this is a feel-good sandwich that you will make time and time again.
Pimento Grilled Cheese
This recipe marries two of our favorite guilty pleasures: grilled cheese sandwiches and a classic southern pimento cheese. Mayonnaise is the magic ingredient here. It makes the cheesy filling incredibly gooey and a thin smear on the outside gives the bread a crispy, golden crust. Per the name, pimento cheese is traditionally made with jarred pimento peppers, but I like to add a bit of tang and use pickled cherry peppers in their place. The acidity of the pickles cuts through the richness of the cheeses. This recipe makes a quart of pimento cheese, which is more than you’ll need for four sandwiches. Use any leftovers to make more sandwiches or serve with Saltine crackers and cut up vegetables during cocktails.
