Microwave ice cream and end up with cake…huh?! The tease from Food and Wine caught my eye, so I decided to investigate. (Once a reporter, always a reporter.)
I created three different ‘cakes’ and used H-E-B’s Creamy Creations ice creams, which by the way, are quite delish right out of the carton. My creations were made with strawberry ice cream, a chocolate/coffee and a peanut butter chocolate flavor. Naturally, these tiny treats (or ‘Cake Melts’ as I’m calling them) deserved some cute names… 🙂
– Strawberry Cream Melt
– Java Chocolate Chunk Melt
– Deluxe PB Cup Melt
The process with each is simple: Whisk together about half a pint of the melted ice cream, a generous 1/2 t of baking soda and a heaping 1/3 c of flour.
Pour into a small microwavable container like a coffee cup or custard dish. Microwave on high for approximately 1-2 minutes. I started with 1 minute and then added 30 second increments until the cake snack was done. You’ll see it pull away from the edges of the container. Then, it’s ready to serve!
