Just looking at these incredibly lush, crispy leaves — it’s quite a sight! This lettuce is actually a hybrid; a cross between Green Leaf and Iceberg with the nutritional value of the Green Leaf, combined with the “crunch” factor from the Iceberg. And how it’s presented can make all of the difference.
There are a couple of ways to plate this cool appetizer: either already within the lettuce cups or fix it how you fancy:
Chef Ojan gave our cameras a quick demonstration, assembling lettuce cups filled with his recipe for Asian Chicken Salad…something that’s easy to whip together and gluten-free. You’ll want to make the chicken salad mix in advance so that all of the flavors get to marinate and marry together.
One of the primary advantages of our hybrid lettuce lies in how it was cut — with high pressure water over a blade so that the lettuce doesn’t oxidize. The high pressure keeps it clean and green for days! You don’t even have to wash it before use so the prep is nil.
The secret ingredient is Chef Ojan’s choice in Thai-Chili sauce. Napa slaw also gives the mixture texture, color and nice volume…a must.
