Just in the nick of time for Mardi Gras — the Kings Cake! And I’ve got a true expert to guide you through each and every step, so you can make this majestic dessert at home. I caught up with Pastry Chef Alain Dubernard at the gorgeous CIA campus, located at the newly restored Pearl Brewery in San Antonio. He’s the boss behind the baked goods here and says the key to this biblical cake (its name taken from the Three Kings) is all about technique!
The cake is basically a brioche with lots of sugar that gets stretched, rolled, smoothed then baked — all with a tiny trinket, or baby Jesus (typically a ceramic piece) hidden inside. Whoever bites into this figurine is said to receive good luck!
Once it’s done baking, get ready to decorate. We added a powdered sugar glaze as well as additional icing and festive sprinkles to mark the occasion…a Kings Cake is all about decor as well as taste after all. Enjoy this fun recipe everyone! Happy Mardi Gras!
