Turns out the delightful, lithe Princess Diana had a little secret: When entertaining friends, her chef would prepare their food with all the good stuff—heavy cream, real sugar, eggs—but he would prepare her version of the same dish with skim milk, sugar substitutes, and the like.
That’s just one of the fun stories her personal royal chef, Darren McGrady, shared with me when we cooked together recently.
The Royal Chef, as he’s known, spent 11 years at Buckingham Palace cooking for the Queen and then four years as Princess Di’s personal chef. His stories are delightful, and yes, he says the Princess was just as lovely behind the scenes as she appeared in front of the cameras.
Chef McGrady says there was one dessert, Di’s favorite, that he always prepared the traditional way, with loads of butter, sugar, and eggs.
