Okay, I think we’re gonna like this. As I told you last week, Mike and I started the Atkins diet-basically no carbs of any kind the first two weeks and then limited carbs after that. The first two weeks were a bit rocky, but now we’re starting to see results. I usually try to stay away from carbs in general which is usually pretty easy to do as a lifestyle kind of thing. What makes this a bit challenging for me is that I HATE the word diet…
I don’t usually succeed because I’m always thinking about what food I want to eat that’s not on my diet. This time I’m concentrating on cooking good meals that are ‘legal’ so we don’t feel deprived. I’ve got a fabulous recipe in my recipe section for a dish that’s legal on this diet. It’s a chicken and mushroom dish that’s really tasty. Use lots of garlic!
Mike weighed at the gym and says he’s down 5 pounds!!! I don’t have a scale, but I can tell my clothes are a bit looser (you know how those waistbands can be!!). Plus, now that we’re out of that ‘induction’ phase that I talked about last week, we can enjoy a glass of wine with dinner and still be ‘legal’. The book says the first pounds you lose on Atkins are water weight and then the fat will start burning after that. I’ll keep you posted!
