Who could resist Chocolate Almond French Toast? Almost anything tastes better with chocolate!! This delectable treat served at Francesca’s Brunch at the beautiful Westin La Cantera can be made in your very own kitchen! Try it…your family will love you for it!!
Chocolate Sauce method:
Heat the water and add the butter and sugar and bring to a boil. Then add in the corn syrup, cocoa, and chocolate. Last add in the scraped vanilla bean excluding the pod. Mix well with a hand blender. Place into a squirt bottle.
Egg Batter method:
Combine all ingredients in blender and blend on low speed for 30 seconds. Strain through a fine mesh strainer.
Finish
Slice the white bread a 1/2 inch thick, and dip in the egg batter. Then cover battered bread with sliced almonds. Repeat this process one more time. In a hot non-stick pan, fry French toast in little bit of butter and flip when golden brown. Place 2 pieces of French toast onto a plate and garnish with powdered sugar and chocolate sauce.

- 9 oz Water
- 4 oz Butter
- 4 oz Sugar
- 4 oz corn syrup
- 5 oz 65% dark chocolate
- 1 oz cocoa powder
- 1/2 vanilla bean
Egg Batter
- 15 ea – Eggs
- 1/2 ea – Vanilla Bean
- 1 tbsp – Cinnamon Powder
Almond French Toast
- 2 ea -sliced white bread (challah or brioche)
- 8 oz- slice untoasted almonds
