Liberty Kitchen Garden Oaks allows guests to customize their Hawaiian Poke. Additional add-ins from Chef Travis Lenig include: cucumber, mango, avocado, jalapeño and ginger.

Ingredients

Classic Poke Sauce:

  • 2 Cup  Soy Sauce
  • 1/2 Cup  Sesame Oil

 

Foodland Pupukea-Style Sauce:

  • 1 Cup  Mayo
  • 1/3 Cup  Sambal Olek or Sambal Badjak (Indonesian)
  • 1  Lime, juiced
  • ½ Cup  Classic Poke Sauce

 

Foodland Salmon Poke:

  • 1# Salmon  trimmed and medium diced, hold and prep on ice
  • 1 cup  Tomato, Small dice
  • 3/4 cup  Onion, fine julienne, soaked in ice water 5 minutes
  • ½ cup  Scallions, finely sliced
  • ½ cup  Pupukea Sauce
  • Hawaiian Salt
  • Cracked Pepper

Base: Steamed Rice
