First order of business, IC’s award-winning Pork Tamale Pops. These are a fun twist on a classic recipe with moist pork, flavorful tamale masa, Pepper Jack cheese and salsa cruda plated with an avocado cream sauce.
Tuna fans will love the Pepper-Crusted Tuna. It’s seared rare with pickled red onions, tri-colored carrots and fresh basil escabeche.
The Picadillo Purses make for a beautiful presentation. Crispy phyllo with seasoned ground sirloin, roasted corn, carrots and Pepper Jack on the inside.
An epic southern party food could be the Brisket Quesadillas…that’s smoked brisket with a roasted corn tomatillo relish and lime crema. Supremely delish!
IC’s Citrus Ceviche is yet another winner…fresh gulf shrimp, Mahi Mahi, triple citrus, tomatillo, mango and crisp radish.
