Sweet Potato Bundt Cake
Warm Sweet Potato Whipped Bundt Cake with a maple glaze from CURRENT inside The Westin At The Woodlands! Plated with spicy Texas pecans and whipped cream in a local honey drizzle.
Ingredients
- 1 cup Oil
- 2 cups sugar
- 4 eggs
- 20 oz. fresh sweet potatoes steamed or boiled and mashed
- 2 cups flour
- ½ tsp. baking soda
- 2 tsp. Cinnamon
- 1 ½ tsp. pumpkin pie spice
- ½ tsp. salt
- 1 tsp. vanilla paste
- 1 cup chopped pecans
- 1 ea Orange zest
Instructions
- Cream oil and sugar. Add eggs, vanilla and orange zest. Mix in sweet potatoes.
- In a separate bowl, sift dry ingredients together. Mix in pecans and add to wet mixture.
- Pour equal amounts of batter into the cavities of a miniature bundt pan and bake at 370 degrees for 20 minutes.
