Instructions
For the Strawberry Limeade Paleta:
  1. Mix sugar and water together in a pot and bring to a boil, then set aside.
  2. Combine strawberry purée, lime zest, citric acid, and lime juice in a blender. Add sugar water mixture.
  3. Cut open vanilla bean and scrape the pulp into the mixture in blender.
  4. Weigh out the strawberry lime mixture, then add water for a 1:1 ratio (example: for 100g strawberry lime mixture, add 100g water)
  5. Fill Popsicle molds three quarters of the way (use instructions on popsicle molds).
  6. Freeze overnight.
  7. Unmold to serve.
For the Fun Dip:
  1. Grind freeze-dried strawberries in a coffee grinder until it becomes a powder.
  2. Cut open the vanilla bean, scrape out its pulp and rub together with the lime zest.
  3. Mix all ingredients together and serve with popsicle on the side.
