This is such an easy and delicious side to just about any dish. Roasted Pepper Qinoa Pilaf from our friends at HEB Cooking Connection. You cook it just like you would cook rice. You and your family will love this! It’s paired here with Watermelon Chicken.
Bring 2 cups broth to a boil in a 3-quart pot; add 1 tablespoon rub and Trinity. Add qunoa; boil 5-7 minutes cover then turn on low and simmer 10 minutes or unqil quinoa is tender and all liquid is absorbed. Toss qnoa with red peppers. Season to taste and serve hot!

- 1/2c Diced Roasted Red Peppers
- 1c Quinoa
- 2c Chicken Broth
