Gristmill Chicken Salad
Ingredients
- 1 ½ cups cooked chicken breast meat (diced 1/2")
- 1 cup celery (diced 1/4")
- 1 Tblsp red onion (diced 1/8")
- ¾ cup cooked bacon (diced 1/4")
- 1 ½ cups mayo
- 4 Tblsp sweet relish
- 4 Tblsp dill relish
- 1 Tblsp coarse grind pepper
- 1 tsp salt

Does that actually say 3/4 cup of bacon? Really? Just sounds like a LOT.

The BEST chicken salad!!! I just ate some yesterday!
To put it in perspective, the recipe serves 6, so each serving would only have 1/4 cup chicken and 2 tablespoons cooked diced bacon. The mayo would worry me more, since it constitutes almost half the salad. How about substituting part yogurt or low fat sour cream?
