Gristmill Chicken Salad

  • 1 ½ cups cooked chicken breast meat (diced 1/2")
  • 1 cup celery (diced 1/4")
  • 1 Tblsp red onion (diced 1/8")
  • ¾ cup cooked bacon (diced 1/4")
  • 1 ½ cups mayo
  • 4 Tblsp sweet relish
  • 4 Tblsp dill relish
  • 1 Tblsp coarse grind pepper
  • 1 tsp salt

To put it in perspective, the recipe serves 6, so each serving would only have 1/4 cup chicken and 2 tablespoons cooked diced bacon. The mayo would worry me more, since it constitutes almost half the salad. How about substituting part yogurt or low fat sour cream?
