The official Fiesta Cookbook is loaded with some great recipes. These Cheese Grits add a little Fiesta kick with Tabasco and green chiles. Fiesta volunteer Celia Martinez submitted this recipe.
Cook grits per package instructions, leaving them “soupy”. Preheat oven to 350 degrees. Grease a 9×12″ casserole dish. Mix in all the other ingredients. Pour grits mixture into prepared casserole. Bake for 45 minutes, but check after 35 minutes. It should be stiff and not soupy.
Ingredients
- 2 cups uncooked grits
- 10 oz. extra sharp Cracker Barrel Cheese – grated
- 1/2 cup margarine
- 2 tsp Tabasco Sauce
- Dash of salt
- 1/8 tsp garlic powder
- 3 eggs – well beaten
- 4 oz. can chopped green chiles
