Citrus Lobster Salad
Ingredients
- Lobster Claw -1pc
- Bluebonnet Greens – (assorted) 1.5 oz
- Potato Ring – 1pc
- Citrus Segment – 6 pcs
- Citrus Vinaigrette – 1oz
- Popcorn shoots for Garnish
Lobster Salad
- 1 tbsp orange reduction
- 1 tsp minced shallot
- 3 tbsp Texas olive oil
- 1 tbsp rice vinegar
Citrus Vinaigrette
- 1 potato – (peeled)

Citrus Vinaigrette Preparation
Combine the orange reduce, shallot, rice vinegar; mix. Slowly add olive oil to emulsify. Season with S&P to taste.
Potato Ring Preparation
Spin on a spiral Mandolin and place potatoes in water. Wash for at least 3 min under cold running water. Spray the outside of a 3” ring mold. Wrap potato string around the mold; Fry at 325 for 3 and a half minutes. Remove and allow to cool.
Finish
Assemble Lobster Salad ingredients and arrange on your plate in the Potato Ring.
