These always smell so good when they’re on the grill at NIOSA. No wonder they’re a favorite!
The recipe is quite simple. All you need to do is marinate the beef cubes in the marinade mixture for at least 6 hours. Then, alternate beef, fresh onion wedges and fresh bell pepper wedges on skewers; grill over hot coals until done. Enjoy – and VIVA FIESTA!
Ingredients
- 3 lbs. ball tip beef, cut into cubes (this is a special cut of meat NIOSA uses; top sirloin will also work
Marinade
- 1/2 clove garlic, minced
- Juice of 3 lemons
- 1/2 c. olive oil
- 1/4 tsp. pepper
- 1/4 tsp. salt
- 1/4 tsp. oregano
- 1/4 tsp. ground comino
- 1 chopped onion
Veggies
- Onions – cut in wedges
- Bell Peppers – cut in wedges
