- 6-8 Heirloom tomatoes
- 2 T Basil, thinly sliced
- 1/2 c Basil oil (olive oil and blanched basil about 10 seconds in blender then paper filter)
- 1/2 c Vinaigrette (Dijon mustard, olive oil, red wine vinegar and Worcestershire)
- 5 Shallots, chopped
- 5 oz Goat cheese
- Salt and pepper, to taste

Cut a variety of tomatoes in wedges. Place in mixing bowl. Mix with the chopped basil, shallots, vinaigrette to taste and toss to plate. Place a mound of tomatoes on a chilled plate and garnish with slice of goat cheese. Drizzle basil oil around and sprinkle goat cheese with salt and pepper.
