Bistro Vatel’s heirloom tomato salad

  • 6-8 Heirloom tomatoes
  • 2 T Basil, thinly sliced
  • 1/2 c Basil oil (olive oil and blanched basil about 10 seconds in blender then paper filter)
  • 1/2 c Vinaigrette (Dijon mustard, olive oil, red wine vinegar and Worcestershire)
  • 5 Shallots, chopped
  • 5 oz Goat cheese
  • Salt and pepper, to taste

Bistro Vatel is one of San Antonio’s great French culinatry destinations. This salad is so fresh…and so delicious. You will love it!

Cut a variety of tomatoes in wedges.  Place in mixing bowl.  Mix with the chopped basil, shallots, vinaigrette to taste and toss to plate. Place a mound of tomatoes on a chilled plate and garnish with  slice of goat cheese. Drizzle basil oil around and sprinkle goat cheese with salt and pepper.

Serves 4-6.
