You’ve probably heard about the benefits of eating Paleo–and they’ve been proven. This “diet of our ancestors” is based on essential foods humans thrive on; those nutrient rich with the right fats, protein and carbohydrates for health living.
Dr. Loren Cordain was one of the first to introduce the practice to a mainstream audience with his book, The Paleo Diet. Sheet Pan Paleo aims for more of the same – and that’s a great thing! This new cookbook of ‘one-tray’ recipes combines healthy proteins, fresh veggies and savory spices that cook together, enhancing the flavors of each. Such is the case with the Eggplant Stuffed with Ground Lamb and Mediterranean Spices you see above. 🙂
Just a few super-simple steps: first, toss ingredients onto a pan; then roast, bake or broil. And clean-up is a breeze! The following recipes are also naturally gluten and dairy-free, as well as labeled vegan.
